K-den,
I've made this for a party to yield 3 gallons (48-8oz portions). You'll definitely have to adjust and base on taste to get smaller portions.
Ingredients
1 Costco Chicken
3 bottles (10fl oz) Kikkoman Memmi Soup Base
4 gallons of water
1 garlic bulb (chopped/minced/crushed)
3 oz of sesame oil
Cut up chicken into 1 inch (or smaller) pieces. Strip as much meat as you can from the bone. Use 2 of the 4 gallons of water and bring to a boil. While the water is heating, and in a separate pan (or pot), add 1 oz of the sesame oil and saute the garlic. Add chicken after the garlic turns a light brown and stir to coat evenly. This should take about a minute. When done, add the chicken & garlic to the boiling pot of water and leave it for 30 minutes. Strain the chicken stock into another pot (remove meat & bones and discard). The meat is tasteless, but you could use it for chicken sandwiches with added seasoning.
Return the stock back to the stove and set to boil. Add the remaining 2 gallons of water, the Kikkoman soup base, and 2oz of the sesame oil. Heat and stir for another 15 minutes. Let cool for a few hours. Skim the fat that rises to the top. Note that the 4 gallons will reduce to 3 gallons. Adjust the taste by adding more Memmi soup base or water. You can also add Miso paste to texture in the soup (shiru).
